Used Whole Foods chicken Italian sausage (spicy) and substituted cauliflower for the potato. YUM, it was a winner. I could see white beans in this recipe as well to make it a litter heartier – probably cut to make the whole 30 qualification.
Seasoning mix was enough for about 1-1/2 pounds of snapper filets.
This recipe was quite good. I added two links of Frank’s oryx sausage.
On a kick lately and here is some of what I have been cooking
Black bean and squash enchilada casserole
Thai curry (added chicken thighs)
(Un)stuffed pasta bake
the mice want to play. Frank left this afternoon for Milan and have book club this evening(which includes dinner), so no chores for me at home tonight. In fact, I am meeting Frank in Milan tomorrow, so I’m off the hook until Monday!
Venison with Carmelized Onions
Grilled Cabbage with spicy lime dressing
Sausage and Swiss chard Lasagna
Spaghetti with harissa, kale, olives and pine nuts
